The westernmost point on the island of Manhattan is easy to find--there's a noticeable bend in the esplanade railing (and a fine view of New Jersey). The southernmost point on Manhattan might be right where you board the Staten Island Ferry but the ferry terminal doesn't seem like it counts as "dry land." The parking lot just to the west would certainly count, but it's owned by the Coast Guard and fenced off. I went with the corner where the esplanade runs out. The points are less than .5 miles from each other, if you simply can't choose and you want to nab them both.

The northernmost point on the island of Manhattan is in Inwood Park, just off the trail, and you can get there by scrambling down some old stone steps. The easternmost point on Manhattan is right about where West 220th would meet the Harlem River and you can get there by ducking through a hole in a chainlink fence. The points are less than 2 miles from each other, if you simply can't choose and you want to nab them both.
